There are no fast & easy rules, and the rules that exist are wrong. For instance, drinking red wine with rich blue cheeses will often leave you with a wretched taste in your mouth. Actually, cheeses dampen the flavor of wine rather than increase them. When selecting wine with dinner, your first though should be a white wine. They pair well with many more foods. The only foods that truly go well with heavy red wines are cuts of meat like a beef rib eye or a leg of lamb. If prefer reds to whites for dinner, lighter varitietals such as Pinot Noir and Sangiovese often work best.
